This beautifully burnt masterpiece is my take on the San Sebastian Cheesecake.
A light custard flavour, delicate soufflé texture and a crunchy burnt sugar top layer similar to a Crème Brulee.
This no crust cheesecake defies all the rules when it comes to baking cheesecakes. Baked at a high heat, this Burnt Basque is meant to sink, crack and have a deep colour.
